Pilot Coffee Roasters was founded in Toronto in 2009 (originally as Te Aro, a nod to founder Andy Wilkin's New Zealand background) and grew into one of Canada's most prominent specialty roasters. Known for direct sourcing, a quality-control-focused 'Cupping Lab,' and clean, balanced roasting, Pilot helped lead Toronto's third-wave coffee culture and expanded steadily across the city and beyond.
