From the roaster

Lovingly named for our first cafe in New York City, The Waverly is our signature espresso. Seasonally driven, but designed to achieve a balance of body and sweetness with lively fruit notes year-round, this espresso is perfect as a straight shot or in milk. We have carefully sourced two components for this particular blend: a coffee from Mexico, which lends a stable, sturdy body and rich sweetness, and a coffee from Colombia that adds clean, well-integrated acidity to the cup.

We craft this blend to ensure an expansive flavor profile based on two components that bring out the best in each other, season to season, drink to drink.

Context

The Waverly Espresso, crafted by Joe Coffee, represents a thoughtful approach to blending, sourcing high-quality beans from both Mexico and Colombia. By combining origins from these two distinct regions, the roaster aims to create a balanced profile suitable for espresso preparation. When evaluating the nuances of such a blend, it is helpful to consider how different growing regions contribute to the final cup; for instance, Colombian coffees are often noted for their bright acidity and caramel sweetness, while Mexican beans frequently offer a lighter, nuttier profile. To better understand the specific characteristics you might encounter in your cup, you can reference the flavor wheel to identify and articulate the complex notes present in this blend. Whether enjoyed as a straight shot or integrated into a milk-based beverage, this espresso highlights the roaster's commitment to sourcing and technical precision in developing a consistent, versatile coffee experience.
