LOOKING TO THE FUTURE: WORKING WITH FARMERS TO STRENGTHEN COMMITMENT
The Tomorrow River flows just a few yards from Ruby’s Nelsonville headquarters and roastery. Though it maybe slight on a map, the Tomorrow River is the center of Nelsonville, carrying momentum across Central Wisconsin and through our town.
The Tomorrow Seasonal Project is designed to work the same way. Though it may just be one small project, we hope it carries momentum for developing farmers across generations. One major hurdle for coffee farmers transitioning to specialty coffee farming is finding a buyer for their new coffee quality.
A lot of these coffees end up purchased at lower prices destined to be included in a blend. The Tomorrow Seasonal Project is designed to target standout coffees from farmers in transition and feature them as single origin releases. When we realized most of these coffees came from certified organic farms, we decided to make the project a permanently certified organic offering.
CODECH is an acronym for Coordinator of Organizations for the Development of Concepcion Huista, and is composed of 10 different organizations. This group of producers is located in Huehuetenango, one of Guatemala’s most esteemed coffee growing regions, and prized for its high altitude and variety of cultivars. CODECH has a long list of constantly developing goals and provides workshops and educational opportunities for their community members including agricultural and organic workshops, leadership workshops, and women's rights and gender equity workshops.
This special lot comes to us as part of the CODECH communities microlots, composed of coffees from higher elevation farms that average about 0.5 hectares in size. Since it comes from a community of farmers, it comprises Bourbon, Catimor, Caturra, Maragogype, and Pache. This fully washed lot comes to us with tart acidity and balances out with rich sweetness.

Context
Ruby Coffee Roasters' Organic Tomorrow Seasonal Project brings a washed Peruvian coffee with a compelling sweet profile. The roaster identifies maple, candied pecan, red apple, and cherry in the cup—a combination that suggests both caramelized sweetness and bright fruit character. Washed processing typically emphasizes cleaner, more delicate flavors, and this lot appears to balance that clarity with substantial sweetness. As a seasonal offering from Ruby Coffee Roasters, this coffee represents their current selections and may evolve with availability. The organic designation adds another layer of intentionality to the sourcing and cultivation.
