From the roaster

Pedro Sagastume has been working in coffee for over 30 years and purchased the land that would become his farm, Los Quetzales, about 15 years ago. He has received praise from other well-known producers in the region, such as Benjamin Paz, for producing "some of the best Honduran Geshas of the season."

Discovered in El Salvador in the 1940s by the Pacas family, the Pacas variety is a natural mutation of Bourbon that has thrived in Honduras since IHCAFE brought it there in the 1970s. As with our Ethiopia Bombe offering, this honey-processed coffee was dried along with the cherry’s mucilage until ideal moisture content was reached. The mucilage becomes dark and thick like honey, hence the name of the process. It also adds an extra layer of sweetness and body.

Context

Produced by Pedro Sagastume in the El Sauce region of Santa Barbara, this Honduras selection highlights the distinct character of the Pacas varietal. Grown in the rugged terrain of Honduras, this lot undergoes a honey process, a technique that sits between washed and natural methods by leaving a portion of the fruit mucilage on the bean during drying. As detailed in our processing methods explainer, this approach often bridges the gap between the clarity of washed coffees and the sweetness of naturals. Roasted by Spyhouse Coffee, the cup presents a delicate profile of honeydew, light brown sugar, and apricot. To better understand how these specific descriptors align with broader sensory categories, we recommend referencing the flavor wheel. This coffee serves as a refined example of how regional terroir and careful post-harvest handling can shape the final expression of a single-varietal harvest.
