From the roaster

Context

"The Fermentation Project" represents a collaborative effort between 19grams and James Hoffmann, showcasing a specific lot sourced from the Guatemala · Antigua region. This release highlights the intersection of meticulous processing techniques and regional terroir, inviting enthusiasts to explore how controlled fermentation environments can influence the final cup profile.

When evaluating such experimental lots, it is helpful to reference the flavor wheel to identify the nuanced shifts in acidity and sweetness that often emerge from non-traditional processing methods. While standard washed coffees from Antigua are frequently celebrated for their balanced, clean profiles and bright acidity, experimental fermentation can introduce unexpected complexity and depth. This kit serves as a focused study for those interested in the evolving landscape of coffee production, providing a direct look at how the partnership between roaster and producer can push the boundaries of what is possible within a single origin.
