From the roaster

Peru — Mikan

Grown in the high-altitude areas around Jaén, this coffee benefits from a humid high-jungle climate, rich volcanic soils and plenty of tropical rainfall.

Ripe cherries are hand-picked and processed on the smallholder producers’ individual farms using hand-pulping machines, before being fermented in tanks and dried on patios or raised beds. Once processed all lots are sent to Falcon’s production facility, Mikan, in Jaén.

The washed process keeps things clean and balanced, highlighting the Tabi variety’s characteristic sweetness, citrus acidity and smooth body. Expect orange and vanilla, with a sticky sweetness that carries through the cup.

Context

Sourced from the Jaén region of Peru, this offering from Assembly Coffee showcases the Tabi varietal. Developed by Cenicafé, the Tabi variety is a cross between Bourbon, Typica, and Timor Hybrid, often noted for its resilience and complex cup profile. This specific lot undergoes a washed process, a method typically employed to highlight the inherent clarity and acidity of the bean.

In the cup, the profile presents notes of orange, vanilla, and a distinct sticky sweetness. While flavor perception is subjective, these descriptors can be mapped against the flavor wheel to better understand how specific processing and origin characteristics influence the final experience. Washed coffees generally emphasize the crisp, clean qualities of the terroir, allowing the nuanced interplay between the Tabi varietal’s genetic background and the high-altitude environment of Jaén to take center stage.
