From the roaster

Since 1890, coffee has flourished at Aquiares, where organic soils and abundant rainfall have created an ideal terroir for aromatic coffee. Streams flow between lush rainforests where tall Ceiba trees give shade to Arabica coffee varietals. Inside the farm, a vibrant community lives and breathes coffee, and shares the commitment towards a sustainable, premium product. Aquiares is not only Costa Rica's largest coffee estate, but a proven regenerative agriculture model, with Rainforest Alliance Certification and the first coffee farm to achieve Carbon Neutrality.

This hybrid is derived from the cross of Rume Sudan & Sarchimor and loves the fertile soils of Aquiares with unique volcanic, Caribbean and shaded terroir. Producing burgundy red cherries bearing a dense, and large bean. These lots are picked every 15 days only at only 5-10 bags per day. A team of select pickers, or "microloteros" have in these years perfected the skill of selection for optimal ripeness.

Brash Coffee

Context

This lot from Brash Coffee showcases a distinctive hybrid varietal—Rume Sudan & Sarchimor—grown by Aquiares in Costa Rica. The Sarchimor lineage is known for bringing complexity and disease resistance to coffee-growing regions, and this particular cross introduces Rume Sudan genetics, a varietal prized for its unique aromatic potential. Costa Rican coffees from this region often balance brightness with subtle fruit characteristics, creating space for the hybrid's inherent character to emerge. Aquiares' stewardship of this varietal offers an opportunity to explore how heirloom African genetics (Rume Sudan) and engineered resilience (Sarchimor) can combine in the cup.
