From the roaster

Formerly a veteran war trauma surgeon, and later a volunteer with Doctors Without Borders, Henry retired from the medical field to start a coffee farm with his wife Verena. Together, they methodically grow, pick, and process many different varieties of coffee grown on their three farms, Fincas Maputo, Hakuna Matata, and Rancho Tio Emilio. Henry has devoted the same sense of precision and attention to detail he had working in the medical field to specialty coffee industry, producing some of the highest quality beans in Ecuador.

Brash Coffee

Context

This lot comes from Henry Gaibor, a producer in Ecuador's Pichincha region, featuring the classic Typica varietal. Brash Coffee's roasting brings forward bright citrus and stone fruit characteristics—orange and starfruit dominate the cup profile. Typica coffees are known for their clarity and balance, and this Ecuador offering demonstrates those traditional strengths with a fruit-forward expression. The combination of origin terroir and careful roasting makes this a compelling study in how regional character translates through a familiar varietal.
