From the roaster
Nestled in the mountains overlooking beautiful Lake Atitlán in southwestern Guatemala, ASUVIM is a small coffee association with a unified focus on quality. Each evening, approximately 65 producers in the area bring their ripe coffee cherries to a central mill where this lot is processed. The result is an exceptionally clean and vibrant coffee that showcases the best of this region’s coffee flavors. Enjoy notes of stone fruit and milk chocolate, accompanied by a syrupy body.

Context
Produced by the ASUVIM cooperative, this selection hails from the volcanic landscape surrounding Lake Atitlán, Guatemala. Coffees from this specific region are often shaped by the unique microclimates created by the lake’s deep basin and the surrounding peaks, which can influence the development of the coffee cherry. While Counter Culture Coffee highlights distinct notes of stone fruit and milk chocolate in this lot, the final profile is a reflection of both the local terroir and the meticulous processing methods employed by the producers.
When exploring the nuances of such a profile, it is helpful to reference the flavor wheel to better identify the specific characteristics of stone fruit acidity or the sweetness of milk chocolate. Understanding the intersection of regional geography and processing techniques provides a deeper appreciation for how these elements translate into the cup, offering a clearer picture of the diverse landscape of Guatemalan coffee production.
