From the roaster

In the highlands of western Guatemala, near the town of Concepción Huista, Juana Gaspar’s small farm produces exceptional coffee emblematic of the entire region. Juana is a part of the CODECH cooperative, an organization we’ve worked with closely since 2010. Each season, the cooperative tastes each farmer's delivery, setting aside the highest-scoring lots to be sold at a premium, incentivizing and rewarding quality on a farm level. Juana’s coffee is regularly one of the top-scoring coffees each season. After hundreds of cups tasted, the coop once again identified this coffee as one of the best of the harvest, and our sourcing team couldn’t agree more. Enjoy densely sweet black cherry and plum notes balanced by crisp, well-structured acidity.

Context

Produced by Juana Gaspar in the Concepción Huista region of Guatemala, this single-producer lot represents the meticulous work of smallholder farmers in the highlands. Coffees from this specific region are often celebrated for their distinct character and structural complexity. When evaluating such profiles, roasters like Counter Culture Coffee focus on highlighting the inherent qualities of the harvest, which in this instance presents as black cherry and plum.

To better understand how these specific fruit-forward characteristics fit into the broader spectrum of coffee profiles, it is helpful to reference the flavor wheel. While stone fruit notes like plum and cherry are frequently sought after in high-quality lots, the final expression is always a reflection of the unique microclimate and processing methods employed by the producer. By focusing on the work of individual growers like Juana Gaspar, we gain a clearer perspective on the diversity found within the Guatemalan coffee landscape.
