Fuego - Catuai Fermented with Cashmere Hops
Roasted by Dark Matter Coffee
Experimental fermentation with Cashmere hops creating floral and tropical notes.

From the roaster
Our latest Fuego is an experiment we conducted at Finca San Jeronimo Miramar in Guatemala, working with Cashmere hops in the fermentation tank to influence the profile of the brewed-up cup of coffee!
We rehydrated dried hop pellets that we sourced from our friends at Half Acre, bringing them back to life and making them easier to evenly layer in with the freshly pulped Catuai, which spent days in contact with these porous beans, imparting their floral, tropical notes in the beans while they are easier to manipulate. Cashmere hops are known to have a citrus, stone fruit, and herbal notes when used in beer brewing, with this being one of the hops used in Half Acre's Bodem.

Context
Fuego represents an experimental approach to coffee fermentation, where Cashmere hops are incorporated during processing to introduce distinctive aromatic and flavor compounds. This technique moves beyond traditional fermentation methods, creating a bridge between specialty coffee and brewing traditions from other industries. The use of hops—typically associated with beer production—suggests intentional flavor layering, though such experimental ferments remain uncommon in mainstream specialty coffee.
Catuai, the varietal here, is a reliable workhorse hybrid, while Guatemala's coffee regions are known for their volcanic soils and balanced cup profiles. Dark Matter Coffee's roasting of this fermented lot channels the processing work into the tasting experience: nectarine and butterscotch suggest stone-fruit sweetness and body, while anise hints at the spice and herbal complexity that hop fermentation may contribute. For those curious about fermentation's role in coffee development, this lot offers a modern, ingredient-forward example.
