From the roaster

A sweet coffee from the Los Rodriguez family in Bolivia. This Java Natural from their Waliki farm in Caranavi runs through a drying method specific to their farm, called coco natural (nothing to do with coconut). In the cup: vanilla, stewed cherries, brown sugar, and an edge of booze on the finish.

Dayglow

Context

Vanilla Sky comes to the Los Rodriguez family's farms in Bolivia's Caranavi region, where natural-processed coffees tend toward the fruit-forward and sweet. The natural process allows extended fruit contact with the bean, often resulting in the deeper, boozy character Dayglow identifies here alongside vanilla and stewed cherries. This lot arrives at Dayglow already carrying the inherent sweetness of its processing method—brown sugar and stone fruit notes that complement rather than compete with the roaster's own work. Natural coffees reward careful handling to highlight their distinctive fruit-and-ferment profile, and this offering pairs those qualities with the approachable sweetness that makes the category so popular.
