COFFEE STORY Built on our love of African coffees, this coffee is bright, buoyant, and makes us happy! Bouncy Castle typically showcases a single-origin washed Ethiopian coffee but is open to any sparkly coffees as long as there’s something vibrant, sweet, and fun in the flavour.
Ethiopia Keffa This " Tsebel " coffee, as it's called, is sourced through our importing partner, Catalyst Coffee, and their long-time producer partner, Dinkalem Ademe, who runs sites in Wush Wush and Dimbira, Keffa. It is located in the little village of Wush Wush. It is a washing station owned and operated by Dinkalem Ademe and his wife Sofiya, who source their coffee from about 2500 smallholder farms in the surrounding area. This specific lot, from Dinkalem’s Wush Wush site, consists of local landrace varieties, naturally adapted from the Wush Wush variety near the Agama River that conveys a classic “Washed Ethiopia” profile of bright citrus and warm florals, with some lovely fruit.

Context
Sourced from the Keffa region of Ethiopia, Bouncy Castle Espresso is a washed-process coffee produced by Dinkalem Ademe. This lot features local landrace varietals, which are often celebrated for their diverse genetic profiles and complex cup characteristics. By utilizing the washed process, the producer emphasizes the inherent clarity and acidity of the bean, allowing the bright citrus and warm floral notes to shine through.
Roasted by Detour Coffee Roasters, this espresso is designed to highlight the vibrant fruit qualities typical of high-quality Ethiopian harvests. While washed coffees are generally prized for their clean, crisp profiles, the specific interplay of these flavors can be further explored by referencing the flavor wheel. This selection offers a refined look at the traditional processing methods and regional terroir that define the Keffa area, providing a balanced and aromatic experience for the discerning espresso drinker.
