From the roaster

Nestled in Chiapas’ El Triunfo Biosphere Reserve, Finca Santa Cruz is a story of revival and dedication. Originally founded in 1956, it was reborn in 2013 when the Argüello family embraced its untapped potential. After years of neglect, they began mapping and replanting the land with modern varieties suited to the rich volcanic soil and unique microclimate. Their vision paid off and by 2019, they ranked among Mexico’s top three producers in the Cup of Excellence. For the family, this success affirmed a commitment to innovation, quality, and sustainable farming.

Pepe Argüello has been selectively breeding Geisha since it was first planted on the farm, personally walking the fields to taste cherries and collecting seeds only from the sweetest, most flavorful trees. Combined with identifying the farm’s best microclimates, this hands-on approach has produced a supercharged Geisha, one that proudly took first place in the Cup of Excellence this year in both the washed and natural categories.

How to Drink: Just like you wouldn't add soda to your best whiskey, this amazing coffee is meant to be drank black with no sugar or cream.

Context

Geisha represents a celebrated varietal prized in specialty coffee for its distinctive floral and tea-like clarity, though expressions vary significantly based on terroir and processing. This lot from Finca Santa Cruz in Chiapas's volcanic soils is processed using the honey method, which typically imparts complexity through extended fruit contact with the bean during drying—a technique that can elevate the varietal's natural aromatics. Proud Mary Coffee has selected this particular lot, suggesting a commitment to quality sourcing from Mexico's premier coffee-growing regions. The combination of Geisha's inherent characteristics with honey processing creates potential for layered sweetness and textural depth.
