From the roaster

This year, we are proud to once again offer the SL28 varietal harvested during a recent solar eclipse, earning the name Black Moon Process.

Once harvested, the coffee cherries rest in the shade for three days in specially designed boxes, then they are de-pulped, removing the coffee seeds to be washed before they complete a 48-hour fermentation in water. The final drying is done under the sun on raised beds.

This is a pre-order coffee. All orders with Sumava De Lourdes in cart will start shipping on 10/22/26.

Context

The Costa Rica Sumava De Lourdes represents a compelling intersection of regional tradition and experimental technique. Sourced from Costa Rica, this lot features the SL28 varietal, a plant originally developed in Kenya that is widely celebrated for its distinct acidity and complex profile. By utilizing the unique Black Moon Process, Stumptown Coffee Roasters highlights the impact that specific processing methods have on the final cup.

While traditional washed coffees often emphasize clarity and brightness, experimental techniques like the Black Moon Process can introduce deeper, more nuanced characteristics to the bean. Exploring these profiles is best approached by referencing the flavor wheel to identify the subtle shifts in aromatics and mouthfeel. This coffee serves as an excellent case study for how varietal selection and post-harvest innovation work in tandem to define the character of a single origin.
