Ecuador — La Rosita Bourbon

First cultivated on the island of Réunion before spreading across the coffee-growing world, Red Bourbon remains one of the industry's most revered varieties, celebrated for its natural sweetness and balance.

At La Rosita, the combination of cool Andean temperatures, humid cloud covered conditions and slow cherry maturation allows the variety to develop exceptional depth of flavour.

To preserve that character, Rosa Morillo carries out a carefully controlled washed process. Ripe cherries are selected by hand before fermenting for 24 hours, then pulped and returned to tanks for a further 12-hour fermentation with the mucilage intact. The coffee is then fully washed and dried in covered polytunnels for around 10 days.

The result is a rich, rounded cup with remarkable sweetness.

Context

Produced by Rosa Morillo in Ecuador, this La Rosita Bourbon offering showcases the meticulous standards maintained by Assembly Coffee. As a washed coffee, the beans undergo a processing method that typically emphasizes clarity and highlights the inherent characteristics of the terroir. The choice of the Bourbon varietal is significant; historically, this plant is celebrated for its balanced sweetness and complex profile, often serving as a benchmark for quality in high-altitude coffee production.

When evaluating a single-origin lot like this, it is helpful to consider how the specific processing and varietal influence the final cup. While washed coffees are often prized for their clean acidity and refined structure, the nuances of the Bourbon variety can add layers of depth that are best explored using a flavor wheel. By focusing on these foundational elements, drinkers can better appreciate the deliberate craftsmanship involved in bringing this Ecuadorian harvest from the farm to the roastery.
