Context
The Seasonal Decaf from Bar Nine represents a focused approach to decaffeination, utilizing the Ethyl Acetate (EA) method. Sourced from the Caldas region of Colombia, this lot is produced by the dedicated farmers of Caficultores de Caldas. The EA process, often referred to as "sugarcane decaffeination," is frequently chosen for its ability to preserve the inherent characteristics of the bean while removing caffeine. To better understand how different techniques influence the final cup, you can explore our guide on processing methods.
When evaluating a decaffeinated coffee, it is helpful to approach the cup with the same analytical rigor as any other origin. Because decaffeination can alter the density and moisture content of green coffee, roasters must adjust their profiles to ensure balance. We encourage you to reference the flavor wheel as you experience the specific nuances of this 750mL offering, noting how the regional terroir of Caldas translates through the decaffeination process.
