DECAF-Palo Rosa
Roasted by Big Shoulders Coffee
Smooth Colombian decaf with chocolate, caramel, honey, and fruit sweetness.

From the roaster
Palo Rosa – Colombia Sugar Decaf is a coffee we’re genuinely proud to share. Grown at around 1,600 meters in the hills of Planadas, Tolima, this lot comes from the Palo Rosa Estate, where careful farming and washed processing highlight the sweetness and balance Colombia is known for. It then moves through a trusted and local supply chain, long respected for producing some of the cleanest, most consistent specialty decafs available.
This coffee is decaffeinated using the natural sugarcane (EA) process, which gently removes caffeine while keeping the character of the coffee intact. By using ethyl acetate derived from fermented sugarcane and spring water, the process preserves sweetness, structure, and clarity, so the cup still tastes like great coffee first, not “decaf.”
In the cup, Palo Rosa is smooth, comforting, and quietly complex. Expect notes of chocolate, caramelized sugar, and honey, with a soft fruit sweetness and a rounded, satisfying body. It’s the kind of decaf you can enjoy any time of day thoughtful, approachable, and crafted with the same care as our fully caffeinated offerings

Context
Palo Rosa Estate in Colombia's Tolima region produces this decaffeinated washed coffee at 1600 meters elevation. Despite the removal of caffeine, Big Shoulders Coffee finds the lot retains a rounded sweetness profile—chocolate and caramelized sugar form the foundation, with honey and soft fruit notes adding dimension. Washed processing typically emphasizes clarity and cleanliness, though decaffeinated coffees often benefit from roasters' careful handling to preserve the delicate flavors extraction can strip away. The combination of origin terroir and careful decaffeination suggests this lot offers a practical option for those seeking complexity without caffeine, though natural processing typically yields heavier fruit profiles—a notably different character from this refined, sweet-forward approach.
