Colombia El Tambo-AMACA
Roasted by Onyx Coffee Lab
Single-origin Colombian coffee from a women's farming cooperative in the Western Cordillera.

From the roaster
Located far west in the Western Cordillera Andes mountains of Colombia, there is an association of women banding together with the name AMACA. The Associación de Mujeres Productoras Agropecuarias del Cauca is a group of over 150 women who produce coffee on small farms throughout the region. We've partnered with AMACA to bring you the product of their hard work, and we publish all prices paid to them, which you can find below.

Context
Onyx Coffee Lab sources this lot from AMACA, a women's agricultural cooperative operating in the Western Cordillera of the Colombian Andes. Cooperatives structured around producer communities often prioritize consistent farming and post-harvest practices, which can translate directly into cup quality — and women-led producer groups across Latin America have increasingly been recognized for their meticulous attention to both cultivation and processing.
The washed process strips the cherry away before drying, removing much of the fruit's influence and allowing the bean's inherent character to come forward with clarity. For Colombian coffees, this approach often yields bright acidity and well-defined structure. When evaluating this or any washed coffee, the coffee flavor wheel can be a useful tool for placing the nuanced citrus, floral, or stone-fruit notes that washed Andean coffees frequently express.
