Context
Sourced from the Los Altos De Chiapas region of Mexico, this coffee is the product of the Mercedes Olivera Feminist Collective. As a collective-led initiative, it represents the specific agricultural output of this group of producers. While this particular lot from Caravan Coffee Roasters is currently sold out, it remains a notable example of the regional profiles emerging from Chiapas.
When evaluating coffees with these characteristics, tasters often look for the balance between deep, confectionary sweetness and nutty undertones. The profile of chocolate, toffee, and pistachio aligns with the "Sweet" and "Nut/Cocoa" categories found on the flavor wheel. Generally, coffees from this part of Mexico are recognized for their approachable, comforting qualities, which often provide a stable foundation for both espresso and filter brewing methods. Understanding these flavor categories helps in identifying similar profiles when exploring future offerings from the region.
