From the roaster

We’re really excited to present, for the second harvest in a row, Pitaya! This is a Pink Bourbon blend from producers in the Huila region of Colombia.  The coffees were sourced by our friends Laura and William of Minga Coffee.  Working alongside colleagues Floro and Edinson, this small team analyses and cups Pink Bourbon lots from neighbouring smallholders to create a blend that best represents the variety.
Despite Colombia’s growing association with experimental processing, the majority of the country’s coffee is still washed using traditional wet mills. Minga’s focus is on celebrating clean, washed coffees, showcasing that Colombia has a lot more to offer than just a handful of innovative coffees each harvest.

Context

The Pitaya, sourced from the Huila region of Colombia, represents a meticulous approach to specialty coffee production. Roasted by Caravan Coffee Roasters, this lot features the Pink Bourbon varietal, a plant known for its distinct genetic profile and potential for complex cup characteristics. By utilizing a washed process, the producers emphasize the inherent clarity and acidity of the bean, stripping away the fruit pulp before drying to ensure a clean, focused profile.

When evaluating coffees of this caliber, enthusiasts often consult the flavor wheel to identify nuanced notes that distinguish high-quality harvests. While washed coffees are generally celebrated for their bright, crisp acidity and refined finish, the specific terroir of Huila often contributes a unique depth to the cup. This selection highlights the intersection of careful agricultural practices and precise roasting, offering a clear expression of the Pink Bourbon varietal’s potential within this renowned Colombian landscape.
