Milk Chocolate, Toffee, Dried Apricot

Current Components: Guatemala El Tambor / Ethiopia Zema Ademe / Peru Cajamarca Chirinos

Process: Washed / Natural

Our house espresso blend, crafted for exceptional sweetness, a rich body, and balance in every cup. It shines in milk-based drinks while remaining expressive and versatile across all brewing methods.

Built from three relationship coffees sourced from Guatemala, Ethiopia, and Peru, Deviation Blend brings together the chocolate sweetness of El Tambor, the fruit-forward character of Zema Ademe, and the sweet, balanced profile of Peru Cajamarca Chirinos. The result is a balanced cup with notes of milk chocolate, toffee, dried apricot, and cherries.

Though the component coffees change throughout the year, Deviation always stays true to its purpose: a comforting, approachable espresso with depth, sweetness, and complexity, no matter how far we deviate from traditional blends.

Deviation is designed to perform beautifully across a wide range of extraction parameters. Our favorite starting point is 20g in, 38g out, in 26–28 seconds, then adjust to taste.

Context

The Deviation Blend, crafted by Case Study Coffee, represents a deliberate approach to balancing diverse flavor profiles through a combination of washed and natural processing methods. By integrating these two distinct techniques, the roaster creates a cup that bridges the gap between the clean, structured acidity often found in washed coffees and the complex, fruit-forward sweetness characteristic of natural-processed beans. Understanding the nuances of these processing methods is essential for appreciating how such a blend achieves its specific profile of milk chocolate, toffee, dried apricot, and cherries.

When evaluating the sensory experience of a blend like this, it is helpful to consult a flavor wheel to categorize the interplay between the deep, sugary base notes and the brighter, stone-fruit highlights. This blend serves as an excellent example of how roasters manipulate variables to produce a balanced, approachable cup that remains dynamic from the first sip to the finish.
