From the roaster

In the year 2000, 62 Honduras coffee farmers joined together with a common goal to transform their farms conventional to organic production and formed COMSA. The very next year, COMSA earned their organic certification which has enabled them to market their coffee throughout the world, and realize better selling prices for their coffees.

Context

The Organic Honduras COMSA Co-Op Italian Roast, crafted by Coffee By Design, highlights the distinct profile of beans sourced from the Honduras Marcala region. By applying an Italian roast profile, the roaster emphasizes deep, resonant flavors, resulting in a cup defined by notes of cherry, almond, and cocoa nib. While lighter roasts often preserve the delicate acidity of a bean, darker roasts like this one typically shift the sensory experience toward caramelized sugars and bittersweet chocolate tones.

When evaluating these specific characteristics, it is helpful to reference the flavor wheel to better understand how the nuttiness of almond and the richness of cocoa nib interact within the final brew. This selection represents the collaborative efforts of the COMSA Co-Op, showcasing how organic cultivation practices in Honduras can produce a robust, full-bodied coffee that remains balanced and approachable for those who prefer a darker, more intense extraction.
