Coffee Roots

The story of Jose Julian Giraldo and Crimson goes back to the early 2010s when we met him through Instagram and eventually connecting at a coffee show. We became Jose's first buyer in the US, with the purchase of a moka variety of coffee that became our first special release coffee. Fast forward to 2018 when we made our first visit to see the operations of Las Marias and Cafe 1959. We've offered a few of Jose's coffees in the past, but this release is super special, as we shared this lot with only one other roaster in Japan. Intended for competitions, this coffee is super limited with only 50lbs left. The coffee was processed using a cold room, controlling the temperature of fermentation to drive flavors rather than adding ingredients. The result of weeks of work is this beautiful cup, giving us notes of champagne floral, bright fruits, and loads of spices. This coffee is a beacon of the long relationship and amazingly hard work from our friend Jose.

Context

Produced by Jose Julian Giraldo in the Armenia region of Colombia, the Cafe 1959 Entre Montanas Gesha represents a meticulous approach to cultivation at 2000 masl. This lot features the Gesha varietal, a plant widely celebrated in the specialty industry for its distinct floral aromatics and tea-like clarity. When evaluating such high-elevation selections, roasters like Crimson Coffee often look to highlight the inherent complexity of the bean, which in this instance manifests through notes of champagne, mango, and mulling spices.

Because Gesha coffees are frequently prized for their delicate profiles, they offer a unique opportunity to explore the nuances of the flavor wheel. While every harvest is subject to the specific conditions of its terroir, the combination of the Armenia region’s climate and the careful processing of this lot provides a sophisticated cup that balances bright fruit acidity with warm, spiced undertones.
