From the roaster

You may recognize this coffee name from previous years, and it's from many of the same smallholders in this region. The biggest difference with this year's coffee is that the farmers deliver whole coffee cherry to a central processing station instead of individually managing the wet processing at home. The Daurfusu wet mill is located in Dukurai village, Letefoho District. Initially comprised of 37 members in Dukurai, the operation has cast a wider net this year and is buying coffee from neighboring high altitude zones as well. Farmers in this area are growing a mix of cultivars, mostly Timor Hybrid and Typica, at altitudes of 1400 to 1600 meters above sea level. This is another beautiful Farm Gate coffee.

Context

Sourced from the Dukarai region of Letefoho, this Timor Leste: Honey Process Daurfusu represents the unique profile of the Timor Hybrid varietal grown between 1400 and 1600 masl. The coffee is prepared using the honey process, a technique that leaves a portion of the fruit mucilage on the bean during drying to influence the final cup character. As detailed in our processing methods explainer, this method often bridges the gap between washed and natural profiles, frequently resulting in increased sweetness and a syrupy body.

Offered by Keia & Martyn's Coffee, this lot presents a complex sensory experience featuring notes of chocolate-covered raisin, dried apricot, pear, spice, and hot cocoa. To better understand how these specific descriptors fit into the broader spectrum of coffee aromatics and tastes, we recommend consulting our flavor wheel.
