From the roaster

This coffee is our first from Bali and we couldn't be more excited to share it with you. It comes from the Bangli region of Kintamani and is full bodied, with mild acidity, and rustic sweet undertones. Traditional farming methods are used in these regions including organic farming practices (though not certified), and a complex irrigation system based on terraced water management used to grow rice for over 1000 years. This is an excellent choice for espresso.

Context

The Bali: Wet Hulled Bangli Kintamani offers a distinct profile characteristic of its origin in the Bangli, Kintamani region of Bali, Indonesia. This lot features the S-795 varietal, processed using the traditional wet hulled method. While wet hulled coffees are often recognized for their full body and earthy, savory depth, this specific selection highlights notes of bittersweet chocolate bar, baking cocoa, dried lemon peel, fresh cut cedar, and tobacco leaf.

When evaluating such complex profiles, it is helpful to reference a flavor wheel to better identify the interplay between the woodsy cedar tones and the bright, citrus-like acidity of the dried lemon peel. The combination of the unique Indonesian processing style and the specific varietal creates a cup that balances deep, cocoa-forward richness with subtle, aromatic herbal qualities. This coffee serves as an excellent example of the diverse flavor spectrum found within the Indonesian archipelago.
