From the roaster

From the highlands of Nicaragua, this rare anaerobic Maragogipe Natural is a treat for adventurous coffee enthusiasts. Grown by Bayardo Reyes at Finca San Jose de las Nubes, this coffee comes from heritage seeds saved from his grandfather’s original farm, Finca San Jose. After the farm was lost during the Nicaraguan revolution in 1979, these seeds were carefully preserved and later replanted, keeping the family’s connection to Maragogipe alive.

The Maragogipe variety is challenging to grow, requiring extra care and resources, but its exceptional flavor profile has earned it a special place in the specialty coffee world. Fermented in anaerobic barrels for 84 hours, sun-dried for 24 hours, and finished with careful tunnel drying for up to 28 days, this coffee stands out for its depth and unique flavor profile. The resulting light roast coffee has tropical notes of jackfruit, classic bubblegum sweetness, milk chocolate-coated raisin, bright lemon verbena, and an acidic finish that adds a lively complexity.

“This coffee is a part of my family’s legacy, from my grandfather’s farm to where we are today. It took years of dedication to grow and perfect this coffee, and now I’m thrilled to share it with the world.” – Bayardo Reyes

This limited release is an exciting opportunity for adventurous coffee drinkers to taste something truly unique.

Context

Produced by Bayardo Reyes at Finca San Jose de las Nubes in Nicaragua, this lot showcases the unique characteristics of the Maragogipe varietal. Often referred to as "elephant beans" due to their unusually large size, these beans are processed here using an anaerobic natural method. This specific technique involves fermenting the coffee in an oxygen-free environment, which can significantly influence the final cup profile. In this instance, the coffee presents a complex array of flavors, including jackfruit, bubblegum sweetness, milk chocolate-coated raisin, and lemon verbena.

When exploring such distinct profiles, it is helpful to reference the flavor wheel to better identify these nuanced notes. This selection is offered by Nossa Familia Coffee, highlighting the intersection of traditional Nicaraguan cultivation and modern processing innovation. By utilizing anaerobic fermentation, producers can push the boundaries of what a specific varietal can express, resulting in a cup that is both technically intriguing and deeply flavorful.
