From the roaster

The Garrido family have been cultivating coffee in Boquete, Panama since 1959, when Teodoro Garrido established the family's first farm. In the mid-1970s, Teodoro expanded the family business by acquiring another existing farm – now called, Mama Cata. Originally established in 1911, making it one of Boquete's oldest coffee farms, Teo renamed the farm, to honor its previous owner. Since Teo’s passing a few years ago, the family farms are now under the watchful eyes of Teodoro’s two daughters: Liliana and Gissell. Two fiercely passionate sisters, who couldn’t be more different – but who share a vision, to take the business their father built into the future.

As well as exotic varieties, such as Geisha and Mokkita, Mama Cata is also home to the Garrido family’s best Pacamara. Originally from El Salvador, Pacamara is a natural mutation of the Pacas and Maragogipe varieties. Known for its large, elongated beans, Pacamara has a unique flavor profile – a little savory, a little spicy, but 100% unique. Processed as an ASD Natural (Anaerobic Slow Dry), this lot is loud, with an abundance of fruit notes, while maintaining that unique Pacamara quality.

How to Drink: Just like you wouldn't add soda to your best whiskey, this amazing coffee is meant to be drank black with no sugar or cream.

Context

This limited Pacamara from the Garrido family's Mama Cata farm in Boquete, Panama showcases the distinctive character of anaerobic natural processing. The Pacamara varietal—a hybrid prized for bold, expressive flavors—arrives at Proud Mary Coffee with fruit-forward aromatics balanced by savory and spicy undertones. Anaerobic fermentation intensifies flavor development by limiting oxygen during drying, often amplifying the fruit and fermented qualities that emerge from natural-processed coffees. The interplay of these processing choices and varietal characteristics makes this lot a compelling study in how origin, genetics, and method combine to shape the cup.
