From the roaster
Lychee, peaches and cream & dried raspberry.
From the eastern edge of Java, beneath the volcanic slopes of Mount Ijen, this coffee is shaped by both landscape and legacy. Grown at altitude under pine forest shade, Ijen Lestari reflects a decade of dedication to processing, culminating in award-winning recognition on the global stage. This release also honours the work of Dandy Dharmawan, whose passion for Indonesian coffee continues through his wife Sovy and the wider team. For this anaerobic natural lot, whole cherries are sealed and fermented for 72 hours before careful drying, building depth and sweetness in the cup. Expect a rich and rounded profile with notes of lychee, peaches and cream and dried raspberry.

Context
This anaerobic natural-processed coffee from Ijen Lestari in Java, Indonesia arrives at Five Senses with a compelling fruit-forward profile: bright lychee and peaches balanced against softer cream and dried raspberry notes. Natural-processed coffees tend toward pronounced fruit character, and the anaerobic fermentation method—where beans ferment in sealed conditions—often intensifies and clarifies those aromatics, lending complexity to the cup. The combination of stone fruit sweetness with dried berry undertones and creamy texture suggests a coffee with both vibrancy and body, inviting exploration across the flavor wheel.
