Astrid Dorado is a third generation coffee producer and has grown coffee at Finca Agroambiental since 2004. Agroambiental is a small family farm located in Sotará, Colombia. Sotará is a small town located at high elevation in the mountainous department of Cauca. This region has volcanic soil, ample rain and fresh water, quality coffee varieties and a rich history of coee production. Astrid is engaged in her community and as well as producing coffee and taking care of her family she leads an association supporting women farmers in Sotará.

Panther Coffee’s relationship with Astrid began at a coffee competition and auction in Timbio in 2018. There, Astrid was asked what her life was like as a coffee producer. “Well, I wake up, I take care of my kids, I take care of my husband, I take care of the house, I take care of the animals, then I take care of the coffee.” Panther Coffee green coffee buyer Joel Pollock loved the good natured and honest answer and we continue to love the coffee.

This year’s harvest is as delicious as ever, with notes of Meyer lemon, cherry, and starfruit. We are happy to share with you this product of our lasting relationship with Astrid and Finca Agroambiental!

Context

Produced by Astrid Tatiana Dorado in the Sotará region of Cauca, this Colombia Specialty Coffee from Panther Coffee highlights the potential of the Castillo varietal when cultivated with precision. Grown at 1850 masl, this lot undergoes a washed process, a method typically employed to emphasize a coffee’s inherent acidity and clean finish. While washed coffees are often celebrated for their bright, crisp profiles, the specific terroir of Cauca can contribute unique complexity to the cup.

The roaster identifies a vibrant array of flavors in this selection, including Meyer lemon, cherry, lychee, caramel, and starfruit. These descriptors span a wide spectrum of the flavor wheel, moving from citrus-forward acidity to deep, sugary sweetness. By balancing the structural clarity of the washed method with the distinct characteristics of the Castillo bean, this offering provides a clear window into the high-quality output currently emerging from the producers of Sotará.
