Bees are essential to coffee producers by helping buds set and enabling coffee trees to blossom. Each blossom represents a vital coffee cherry for coffee farmers like Jorge Mendez in Huehuetenango, Guatemala.

Beehives also help create a second income stream for coffee farmers. Coffee Blossom Honey—a partner of Onyx Coffee Imports, based in Huehuetenango—sources and exports honey from coffee farmers in the region.

El Apiario honey has a robust profile with round brown sugary sweetness, peach and citrus notes, and slight vanilla undertones.

Notes from Coffee Blossom Honey

"We’ve known Jorge Mendez for over a decade. His farm being quite near our own, we visit his family at Finca El Apiario multiple times per year. On one such visit six years ago, our group marveled over home-baked bread with honey from Jorge’s farm. An idea buzzed among us, and then stuck: to support alternative revenue streams for coffee producers like Jorge, by connecting roasters with the delicious honey already produced on farms. El Apiario was the first honey we shared with the world."

Context

Produced by Jorge Mendez in the high-elevation terrain of Guatemala · Huehuetenango, this Coffee Blossom Honey lot represents the meticulous craft of PT's Coffee Roasting. Coffees from this specific region are frequently celebrated for their complex acidity and structured profiles, which often provide a vibrant canvas for nuanced sweetness.

When evaluating a coffee with these characteristics, it is helpful to reference the flavor wheel to better identify the interplay between the bright citrus notes and the deeper, comforting undertones of brown sugar and vanilla. While peach and floral-leaning aromatics are often sought after in high-quality lots, the balance achieved here highlights the producer's dedication to quality processing. This selection offers a refined experience that bridges the gap between delicate fruit clarity and a rich, sugary finish, making it a compelling example of the diverse potential found within the Huehuetenango landscape.
