Context
The Colombia Tres Dragones Natural Pour Over Pouch, sourced from the Valle del Cauca region by Café Granja La Esperanza, represents a distinct expression of Colombian coffee production. Roasted by PT's Coffee Roasting, this lot utilizes a natural process, a method often associated with increased body and pronounced fruit-forward characteristics. In the cup, this coffee presents a profile defined by citric acidity, strawberry, cocoa nib, and baking spice.
When evaluating such complex profiles, it is helpful to reference the flavor wheel to better identify the interplay between the bright fruit notes and the deeper, savory cocoa and spice elements. Because natural-processed coffees often retain more of the fruit cherry during drying, they frequently exhibit a heavier mouthfeel and more intense sweetness compared to washed counterparts. This specific offering highlights the meticulous post-harvest techniques employed by the producers to achieve a balanced and nuanced cup.
