Balanced, yet playful. Featuring notes of smooth chocolate, honey, and graham cracker, this three-bean medium roast espresso blend creates a beautiful harmony of flavors with enough depth to show off in long milk drinks.
We roast our espressos on Mondays and Tuesdays and recommend letting Flying Monkey rest for 7 days before brewing.
The Signature Story
Flying Monkey espresso was conjured out of experimentation and curiosity. When you have numerous exceptional coffees at your fingertips, you cannot help but play with the possibilities. Combining coffees from Latin America and Southeast Asia, Flying Monkey is a striking blend with a lot of versatility—much like its fictional counterparts. It's incredibly adaptable and can be enjoyed in just about every setting. Cappuccinos, mochas, and beyond—Flying Monkey is sure to please.
Brew Parameters
Best for long milk drinks, Flying Monkey will show off its milk chocolate, graham cracker, and honey flavors with a pleasant touch of acidity.
If your machine is programmable, we recommend pulling this espresso with the group head set at 199 Fahrenheit. Please note: though we offer an Espresso Grind option, we strongly recommend that you grind your own espresso due to the variability of home espresso machines and the fine-tuning required to dial in shots.
Dose: 20 grams Yield: 38-42 grams Time: 28-33 seconds Drop: 7-8 seconds (bottomless filter) Rest: 7-12 days off roast
It's best to dial in Flying Monkey with a short milk beverage—we recommend a capp. Dialing in by tasting it alone as a shot will overplay the acidity that is desirable in milk drinks.

Context
The Flying Monkey blend, crafted by PT's Coffee Roasting, represents a deliberate approach to balancing diverse origins. By sourcing components from both Latin America and Southeast Asia, this blend aims to create a cohesive profile that emphasizes comfort and approachability. The resulting cup is characterized by smooth chocolate, honey, graham cracker, and milk chocolate notes, offering a classic, dessert-like sweetness that appeals to those who prefer a mellow, rounded experience.
When evaluating such blends, it is helpful to consider how different regional characteristics interact to form a final flavor profile. While Latin American coffees are often noted for their balanced acidity and nutty sweetness, Southeast Asian beans can contribute unique body and depth. To better understand how these specific descriptors fit into a broader sensory framework, you can reference the flavor wheel. This blend serves as an excellent example of how roasters harmonize distinct geographical influences to achieve a consistent, reliable cup.
