About Farami
Nestled in Santa Maria de Dota at elevations of 1,600–1,700 metres above sea level, Juan and Maria’s farm, Quemado de Dota, enjoys the ideal climate for slow cherry maturation. The result is denser beans and a deeper development of flavour. After leaving the Dota Cooperative, the couple built their own micro mill to gain full control over the quality of their coffee. Today, they manage two hectares of coffee trees alongside a mixed-use farm that includes livestock whose methane and composted manure support their home and soil health—showcasing a truly sustainable, closed-loop approach.
Small-Scale Excellence and Honey Processing
This lot combines Caturra, Typica, and Bourbon varieties, processed using the honey method. After selectively harvesting ripe cherries, Juan and Maria soak them overnight before de-pulping—a unique step they believe enhances the coffee’s natural fruit characteristics. The coffee is then dried on raised African beds under the shade of native trees, allowing for slow, even drying that preserves clarity and structure in the cup.
