Tanzania — Edelweiss Estate Kent

Selected at Doddengooda Estate in Mysore, India, Kent KP9293 was originally prized for its resistance to coffee leaf rust, while retaining the classic sweetness associated with the Typica varietal.

Whole cherries are pre-fermented for 24 hours beneath black tarpaulins to enhance sweetness and body before drying slowly in the sun over 25-26 days. Dried coffee is then transferred to hermetic storage until milling. The result is a silky smooth cup, full of ripe stone fruits and a boozy richness.

Context

Produced by the Edelweiss Estate in Tanzania, this lot showcases the unique character of the Kent varietal. While this specific coffee is defined by its ripe stone fruit profile and boozy richness, it is important to consider how processing methods influence the final cup. Natural-processed coffees, such as this one, often undergo a drying phase that can impart a heavier body and intensified sweetness compared to washed counterparts.

Sourced by Assembly Coffee, this selection highlights the distinct terroir of Tanzanian production. When evaluating the complexity of such a profile, tasters may find it helpful to reference a flavor wheel to better identify the nuances between the fruit-forward acidity and the deeper, fermented notes present in the cup. By understanding the intersection of varietal genetics and post-harvest handling, one can gain a deeper appreciation for the intentionality behind this specific Tanzanian offering.
