Mariposa Isabelina — Lorsque Mariposa devient ultra fruitée

Context

The Mariposa Isabelina, sourced from the Junín region of Peru, represents a distinct offering from L'Arbre à Café. Produced by Finca Mariposa at an elevation of 1900 meters, this lot undergoes a Naturelle ASD process. While traditional natural-processed coffees often exhibit heavy fruit profiles and increased body, the specific anaerobic slow dry (ASD) technique can introduce unique fermentation characteristics to the final cup. To better understand how these processing variables influence the sensory experience, you can explore our guide on processing methods.

The roaster identifies notes of cassis, red fruits, citrus, and white chocolate within this coffee. When evaluating such a complex profile, it is helpful to reference the flavor wheel to categorize these specific descriptors. This coffee highlights the evolving landscape of Peruvian specialty production, where meticulous post-harvest handling is increasingly used to refine the inherent qualities of the harvest.
