Downshift: The Coffee That Lets You Take It Easy.

Sometimes, you need the comfort of a great cup of coffee without the full jolt of caffeine. That's where Downshift comes in. Our newest Barista Parlor blend is designed for those moments when you want to "downshift" – to enjoy the ritual and flavor of coffee with half the caffeine.

We've carefully selected two standout coffees for this blend. First, the beloved Finca Terrerito from Honduras, known for its versatile, round, and chocolaty profile, which you might recognize from our Copilot blend. It provides a solid, delicious foundation. Second, a truly exceptional sugar cane processed decaf from Colombia. We know, "decaf" can be a loaded word. But this isn't your average decaf. The sugar cane process, using a natural derivative from sugarcane, gently removes caffeine while preserving the coffee's true origin characteristics. You'd be hard-pressed to tell it's decaf in a blind tasting.

In your cup, you'll find the familiar, comforting notes of a classic coffee: rich chocolate, nutty undertones, and a subtle sweetness. All of this, with a significantly reduced caffeine level. It's the perfect way to enjoy your coffee, at a more relaxed pace. Experience the smooth, balanced flavor of Downshift today.

Context

The Downshift blend from Barista Parlor represents a thoughtful approach to decaffeinated coffee, sourcing mixed varieties from the Copan region of Honduras and Huila, Colombia. By utilizing a combination of washed processing and the sugar cane (ethyl acetate) decaffeination method, this coffee aims to preserve the integrity of the bean while removing caffeine. Generally, the sugar cane process is favored for its ability to maintain a clean profile without the harsh chemical residues sometimes associated with other decaffeination techniques. You can learn more about how these processing methods impact the final cup in our technical guide. With its profile of milk chocolate and a smooth, approachable body, this selection is designed as an "all-day drinker." For those looking to better identify these specific characteristics, consulting a flavor wheel can be a helpful tool for navigating the nuanced sweetness found in high-quality decaf offerings grown between 1000 and 1400 masl.
