SINGLE ORIGIN COFFEE

Country: Guatemala

Farmer: Jesús Constanza

Region: La Libertad, Huehuetenango

Varietals: Borbón, Caturra

Elevation: 2000m

Process: washed

Tasting Notes:  honey, flan, cacao

Jesús is the neighbor of Ader Recinos in the mountains above La Libertad. Their upper farms are literally side by side - you could walk down a row of caturra plantings on Ader's and continue straight along the row of Jesús's. We like to show that despite almost identical growing conditions, coffee can still be distinctly different - from nutrients, farming methods, soil, and post harvest processing. Ader's will follow shortly. Buy em both. This year's coffee from Jesús shows pronounced grape-like acidity from elevation, honeydew and cream.

Context

This single-origin offering from Jesús Constanza showcases the distinct terroir of La Libertad, Huehuetenango, a region in Guatemala renowned for its rugged, high-altitude landscape. Grown at 2000 masl, this lot features the classic Borbón varietal, which is often celebrated for its balanced sweetness and complex profile. By utilizing a washed process, the producer emphasizes the inherent clarity and brightness of the bean, allowing the delicate interplay of honey, cacao, and fruit-forward acidity to shine through.

When evaluating such coffees, it is helpful to reference a flavor wheel to better identify the nuanced transitions between the creamy, dessert-like notes of flan and the crisp, grape-like acidity present in the cup. While washed coffees are typically prized for their clean finish and structural integrity, the specific character of this harvest highlights the meticulous cultivation practices maintained by Jesús Constanza in the Huehuetenango highlands.
