We're in our 9th year of buying coffee from the producers of San Pedro Yosotatu. This stability is a credit to the producers - enhanced through their partnership with Red Fox Coffee Merchants.  This year's Yoso is lovely, clean, elegant, soft. Oaxacan coffee is so good

Context

Sourced from the Sierra Mixteca region of Oaxaca, Mexico, San Pedro Yosotatu represents the collective efforts of multiple producers working with the Borbón varietal. This lot is processed using the washed method, a technique typically employed to highlight the inherent clarity and acidity of the bean. While washed coffees are often celebrated for their clean profiles, the specific terroir of the Sierra Mixteca—ranging from 1600 to 1900 masl—contributes to the unique character of this release from Bows & Arrows Coffee.

In the cup, this coffee presents a comforting profile defined by notes of cacao nibs, cannoli, and honey. These descriptors fall within the sweet and nutty categories often explored when using a flavor wheel to analyze coffee. By focusing on the traditional Borbón cultivar, this selection offers a balanced experience that reflects the specific agricultural practices of the Oaxacan highlands, providing a grounded, approachable cup for those who appreciate classic, well-defined flavor profiles.
