Coffee Info:

We Taste: Vanilla, Floral, White Peach Process: Lychee + Niche Washed Varietal: Selection 10 MASL: 1200 Producer: Ajoy and Pranoy Thipaiah

From our pals at Osito:

Kerehaklu’s standard process is as follows:

Freshly harvested cherry arrives in the evening and are given one last round of hand sorting before being floated in a tank the same day. The water is then drained from the tank, and the coffee sits in the tank under shade overnight.

The following morning, the coffee is de-pulped, transferred to plastic barrels, and fermented for roughly 24 hours; this step can be done with water, with the addition of mosto, or dry. This is the biggest area of variation in Pranoy’s processing. The coffee is then put through a mechanical washer and then dried.

For this specific Selection 10 variety, a 20 L starter culture was prepared using lychee and soil. The coffee fermentation was inoculated with this starter after being pulped and when it was put into barrels.

Context

Produced by Ajoy and Pranoy Thipaiah at the Kerehaklu estate in India, this Selection 10 lot represents a unique intersection of traditional cultivation and experimental processing. The coffee undergoes a specialized Lychee and Niche Washed method, a technique that pushes the boundaries of standard processing methods. While washed coffees are typically celebrated for their clean, bright acidity, experimental fermentations often introduce complex, aromatic profiles that challenge conventional expectations.

Roasted by Brandywine Coffee Roasters, this specific offering presents a delicate sensory profile characterized by notes of vanilla, floral aromatics, and white peach. When evaluating such nuanced flavors, it can be helpful to reference a flavor wheel to better identify the subtle distinctions between stone fruit and floral characteristics. Grown at 1200 masl, this lot highlights the evolving landscape of Indian specialty coffee, where producers are increasingly experimenting with post-harvest techniques to highlight the inherent qualities of the Selection 10 varietal.
