Mexico Esmeralda EA Natural Decaf is decaffeinated using Ethyl Acetate (EA). In this method the green beans are steamed or soaked to expand the beans for caffeine extraction. The expanded beans are then soaked in EA, a naturally occurring organic compound found in many fruits and vegetables which can be synthesized for coffee decaffeination. In the presence of EA, caffeine bonds with the compound and is drawn out of the bean. The decaffeinated coffee is then removed from the EA solvent, rinsed thoroughly, re-dried and re-bagged for transport.

Context

This naturally-processed Mexican decaf from Brandywine Coffee Roasters showcases the roaster's skillful handling of decaffeinated beans. Natural processing—detailed in our processing methods guide—typically emphasizes fruit-forward sweetness, and this lot delivers brown sugar and cherry notes alongside a smooth body. The combination suggests careful sourcing and roasting that preserves complexity often challenging to achieve in decaf coffees. Whether you're exploring decaf options or curious about how natural processing influences flavor development, this offering demonstrates that removing caffeine need not mean sacrificing character.
