From the roaster

High in the hills of Mount Elgon, a coffee-farming community works in near isolation, transporting each sack of coffee on foot or by bike along rugged roads. Where other exporters saw impossibility, Mountain Harvest saw potential: farmers willing to try new things and invest in their future. With support from a Counter Culture Seeds grant, they built a community-run processing station that has given rise to one of the best coffees we’ve tasted in the country, Mabono Honey. Expect notes of berry, brown sugar, and a creamy body.

Context

The Mabono Honey Processed coffee, sourced from the Mount Elgon region of Uganda, represents the collaborative efforts of the producer group Mountain Harvest. This selection is roasted by Counter Culture Coffee and features a profile defined by notes of berry, brown sugar, and a creamy body.

To understand the specific character of this offering, it is helpful to consider the impact of the honey process. As detailed in our processing methods explainer, honey processing involves leaving a portion of the coffee cherry's mucilage on the bean during drying. This technique often bridges the gap between washed and natural coffees, frequently resulting in increased sweetness and a more substantial mouthfeel. When evaluating these specific flavor descriptors, you may find it useful to reference the flavor wheel to better categorize the interplay between the bright berry acidity and the deeper, sugar-toned sweetness present in this Ugandan lot.
