— Everyday Coffee

Context

Produced by Roxana Chambi in the Caranavi region of Bolivia, this Red Catuai lot represents the meticulous standards of Everyday Coffee. Grown at 1550 masl, the coffee undergoes a washed process, a technique often favored for highlighting the inherent clarity and acidity of a specific terroir. While washed coffees are frequently celebrated for their clean, vibrant profiles, the specific character of this harvest leans into a rich, sweet spectrum, featuring notes of jammy apricot, cooked nectarine, and caramel.

To better understand how the processing methods influence these final cup characteristics, it is helpful to consider how the removal of the fruit pulp before drying impacts the development of sugars and acids. For those looking to further refine their palate or identify these specific stone fruit and sugar-browning qualities, consulting a flavor wheel can be an excellent way to categorize the nuanced sensations found in this particular Bolivian offering.
