From the roaster

The next organic certified coffee to release in our line up. A shining light of balance. Both in ethics and quality.

This is a delicious fair trade and organic certified coffee from the co-operative named CODECH (Coordinator of Organizations for the Development of Concepcion Huista) who represent the life and work of 10 different member organisations made up of circa 476 farmers. CODECH was established in 1998 and exists explicitly to advantage farmers with development programs, organic solutions and certifications to help farmers produce more regeneratively and support the land. The organisation is also heavily focussed on women’s rights and gender equity. Working to include women in the workforce and encourage equity in both work and home.

The coffee itself tastes of jammy orange marmalade and fresh orange with mellow caramel flavours. Sparkling acidity and fruit-like sweetness.

A great Everyday coffee, either black or with milk.

Context

Sourced from the high-altitude landscapes of Concepcion Huista, Huehuetenango, this Guatemala CODECH Organic Certified Filter represents the collaborative efforts of the CODECH producer group. Cultivated between 1400 and 2200 masl, the coffee undergoes a washed process, a method typically employed to highlight the inherent acidity and clean profile of the bean. Everyday Coffee has roasted this lot to emphasize a bright, citrus-forward character, featuring notes of jammy orange marmalade, fresh orange, and mellow caramel.

When evaluating such profiles, it is helpful to reference the flavor wheel to better understand how these specific citrus and sugar-browning notes interact. While washed coffees are generally celebrated for their clarity and consistent acidity, the unique microclimates of Huehuetenango often contribute to the distinct sweetness found in these regional selections. This offering serves as a refined example of the quality achievable through dedicated organic farming practices in Guatemala.
