Thelma de Gutierrez' life has revolved around coffee for as long as she can remember. A third-generation coffee farmer, Thelma has been tirelessly focused on improving coffee quality on her farm, no matter the challenges. Thelma's childhood was spent on her family's coffee farm, and she has many fond memories of running around the farm during harvest season while the smell of ripe cherry hung heavy in the air. Thelma purchased Finca Madre Tierra in 2006. In 2014, she purchased Finca Lemus, an adjacent plot. She named the farm after the previous owner, Carlo Lemus, who was a family friend. Through thick and thin, Thelma says, "My love and passion for coffee is what keeps us going."

Context
The Bella Vista, an anaerobic natural coffee produced by Thelma de Gutierrez and roasted by Five Senses, offers a distinct profile characterized by notes of cotton candy, lemon, and pineapple. This lot utilizes an anaerobic natural process, a technique where cherries are fermented in an oxygen-free environment before drying. Generally, processing methods like this can significantly influence the final cup, often intensifying sweetness and altering the acidity profile compared to traditional washed coffees.
When evaluating such vibrant flavor profiles, it is helpful to reference a flavor wheel to better categorize the interplay between the bright citrus acidity and the sugary, confection-like sweetness present in the cup. Because anaerobic processing requires precise control over fermentation variables, this coffee serves as an excellent example of how modern post-harvest techniques can highlight specific fruit-forward characteristics. Whether you are a seasoned enthusiast or a curious newcomer, the Bella Vista provides a compelling look at the impact of controlled fermentation on the final sensory experience.
