From the roaster

Stewed fruit, plum & blackcurrant sweetness, smooth lingering aftertaste.

The Brol family has been farming at San Francisco Cotzal for four generations. The fifth (and possibly the next generation) is now 16 years old and enjoying getting to know the business. When you begin to tally up the generations and subsequent years of work involved in this outfit, the magnitude of the farm begins to make sense. The farm land covers more than 2000 hectares – and with coffee grown on over 1000 hectares, this whole operation can only be described as impressive. Our lots are of the Catuai varietal and possess flavours of mixed berries and ripe orange; they have a jammy texture with a lingering dark chocolate finish. Delicious!

Context

The San Francisco lot, produced by the Brol family in the San Francisco Cotzal region, showcases the distinct character of the Catuai varietal. Roasted by Five Senses, this coffee presents a profile defined by a deep, fruit-forward complexity. The tasting notes highlight a range of stone-fruit and berry characteristics, including blackcurrant, plum, and stewed fruit, balanced by a foundation of dark chocolate and ripe orange.

When evaluating such a diverse array of fruit-driven descriptors, it is helpful to reference the flavor wheel to better categorize the specific nuances of the cup. While Catuai is often recognized for its adaptability and consistent performance, the specific terroir of San Francisco Cotzal plays a significant role in shaping the final expression of this harvest. This selection offers a compelling look at how careful cultivation by the Brol family translates into a rich, layered experience for the drinker.
