From the roaster

We’re proud to welcome Blasina’s coffee back to our shelves in 2026. This is our third time purchasing Blasina’s coffee, and our second time featuring it as an isolated microlot. This year, we’re excited to share it as an Anaerobic Honey, a first for GGET, dried on raised beds for 15 days and hand-sorted throughout the process to support the highest possible quality. For Blasina Martinez Honduras, enjoy tasting notes of hibiscus, nutmeg, & honey.

Context

Blasina Martinez's Honduras Anaerobic Honey represents an increasingly popular processing approach that combines controlled fermentation with honey contact. Go Get Em Tiger, the roaster, highlights hibiscus, nutmeg, and honey in the cup—a profile suggesting the interplay between anaerobic processing and the coffee's natural sweetness. Coffees from Honduras have gained recognition for their complex fruit and spice characteristics, and this lot's floral and warm spice notes align with those regional strengths. The anaerobic method, which limits oxygen during fermentation, tends to intensify fruit and fermented qualities, potentially amplifying the hibiscus brightness alongside the producer's careful honey contact work.
