From the roaster
This yellow honey microlot from Doi Pangkhon showcases the craftsmanship of the Merlaeku family, an Akha hilltribe group operating one of the region’s leading wet mills in partnership with Beanspire. Cherries were selectively harvested, pulped with partial mucilage removal, and dried on raised beds for enhanced sweetness and body.
The result is a clean, textured cup with pleasant, rustic notes. This is a reflection of Doi Pangkhon’s high-altitude terroir and over eight years of processing innovation.

Context
The Thailand Golden Triangle, sourced from the Doi Pangkhon region of Chiang Rai, represents a unique intersection of geography and craft. Produced by the Merlaeku family, this lot features the Chiang Mai varietal grown at elevations between 1250 and 1450 masl. The coffee is processed using the yellow honey method, a technique that sits between washed and natural styles by leaving a portion of the mucilage on the bean during drying. Generally, processing methods like honey processing are utilized to influence the final cup profile, often balancing the clarity of washed coffees with the increased sweetness and body typically associated with natural-processed beans.
Roasted by Mostra Coffee, this selection highlights the emerging potential of Thai specialty coffee. When evaluating the nuances of such a distinct origin, tasters may find it helpful to reference the flavor wheel to identify the specific aromatic compounds developed during the honey-processing stage.
