From the roaster
Las Moritas is the distinguished farm of Higinio and Aura Gómez. Located northeast of Guatemala City in the Sierra de las Minas, Las Moritas has been the source of some of our favorite coffees over the years.
This lot, produced in collaboration with Los Volcanes, is from an exceptional harvest of a variety they are calling "nance," recently uncertain whether it is actually yellow catuaí or yellow caturra. In a round, balanced cup, we're tasting brown sugar and molasses, ginger cookie, warm spice, pineapple, pear, and orange zest.

Context
Produced by Higinio and Aura Gómez, this selection from Guatemala - Las Moritas highlights the distinct character of the Sierra de las Minas region. Coffees from this area are often celebrated for their balanced profiles, frequently bridging the gap between deep, comforting sweetness and vibrant acidity. In this particular lot, the roaster identifies a complex interplay of brown sugar, molasses, and ginger cookie, layered with brighter notes of pineapple, pear, and orange zest.
When evaluating such a diverse range of flavors, it can be helpful to reference a flavor wheel to better categorize the transition from the warm spice base to the fruit-forward finish. While every harvest is unique, the meticulous work of the Gómez family provides a clear expression of the terroir found within this rugged mountain range. This coffee serves as an excellent example of how careful processing can highlight both the structural depth and the nuanced aromatics inherent to Guatemalan production.
