From the roaster

Los Luchadores brings together Pacamara cherries from 2 of the Salaverria family's farms, Villa Guadalupe and San Francisco, located on the sandy loam slopes of the Santa Ana volcano in El Salvador at 1400-1650 masl. The Salaverrias are 6th-generation coffee producers, with José Antonio working alongside his sons, José Antonio Jr and Andrés. The name ‘Los Luchadores' translates as 'The Fighters' - a tribute to the dedication and effort of their team, recognising the skill and innovation required to produce exceptional lots year after year.

Context

Produced by the Salaverria family on the slopes of the Santa Ana volcano in El Salvador, Los Luchadores represents a distinct expression of the Pacamara varietal. Grown at elevations between 1400 and 1650 masl, this coffee benefits from the unique volcanic terroir of the region. The Pacamara variety is widely recognized in the industry for its large bean size and complex, often herbal or spicy profile, which frequently challenges traditional sensory expectations.

This specific lot is brought to market by Round Hill Roastery, a roaster known for highlighting the inherent characteristics of high-altitude harvests. When evaluating the nuances of such a unique origin, tasters often find it helpful to reference the flavor wheel to better articulate the specific aromatic and gustatory qualities present in the cup. By focusing on the meticulous cultivation practices of the Salaverria family, this coffee offers a clear window into the potential of Salvadoran viticulture.
